From the moment we spoke to Saleem (aka Chris), the owner of Sublime, to book a table and he spontaneously reserved for us the best seat in the house, we knew we were in for something a little more classy than most Goan eating spots.
The ambiance created by the lighting and the forest-like setting was a little bit of magic. The venue was charming - the roofless loo and a big, lit up graffiti adding a touch of eclectic to the atmosphere.
We sat under paper lanterns dripping in tiny lights, drinking more than a couple lime martinis and eating beautiful, original food.
Beef carpaccio in pomegranite sauce, Mussels in Andalusia sauce, beef filet stuffed with shitake mushrooms with wasabi emulsion, duck breast cooked with sweet and tangy Asian flavors on a bed of sweet potato mash and delectable deserts to complete a perfect evening.
Nothing we tasted was any less than delicious. In a word: sublime.
